Paleo Challenge: Week 3

Week 3 of our 30 days of strict Paleo brought about a new challenge…superbowl Sunday, a day that is notoriously associated with pizza, chips and queso, beer and the ever-tempting Girl Scout cookies. We were invited over to a friend’s house to watch the game so in order to make it through 4 hours without completely ruining our diet we made sure to bring a few appetizers that we could enjoy.

I knew that deviled eggs would be a hit so I made a batch of homemade Paleo-mayo then made a few regular deviled eggs as well as some bacon avocado deviled eggs. I don’t know why I hadn’t ever thought of this before, it’s like guacamole on an egg white and it’s absolutely delicious. To make them I put the egg yolks, some sliced avocado, a little mayo, garlic powder, salt and pepper in the food processor and pulsed it until it was nice and creamy. Then, using a cake decorating tip, I filled the eggs and stuck a piece of crisp bacon on top. They were all gone within the first 45 minutes!

We also took a big veggie tray with some seasoned mayo dip and I made these awesome jalapeno poppers, which were amazing {we each tried just one}.

I’m not going to lie, it was extremely tough to resist the boxes of pizza and the crock pot full of queso but we were able to find plenty that we could eat including raw veggies, the deviled eggs, ribs and grilled sausage. We did allow ourselves to cheat a little and have a beer :)

We have just over one week left!
